A cookie of my own invention, they are very nice and warming. Also good if you live in a house of cookie snafflers who do not like chilli because you get to finally eat some yourself!

Sy's Lemon and Chilli Cookies. Be daring, I promise they are rather good

For when it decides to snow at the end of March which is INCORRECT. Ingredients (for 15ish cookies): 1 cup of plain flour 1/3 cup of granulated sugar 1/3 cup of margarine 1 tbsp of lemon juice (or more) 2 tsp of chilli flakes (or more) 1/4 tsp of baking powder A pinch of salt Splash of soy milk if required Optional: a grind of pepper

Instructions: 1) Pre-heat the oven to 180C 2) Mix the dry ingredients and lemon juice in a bowl 3) Add melted margarine and mix thoroughly to a stiff doughy consistency 4) Add soy milk if it is too dry 5) The mix should be about as firm as play-dough 6) Pinch off marble-sized balls, roll them in your palms

7) Press flat and place on a non-stick baking tray 8) Place tray in oven and bake for 15 minutes (or until the edges are just turning brown) 9) Take them out the oven, wait for them to cool, and enjoy Notes: - This recipe can be made non-vegan if you want, substituting margarine for butter - I suppose honey can substitute the sugar, but I did

not have enough in - These are about as hard as ginger snaps (especially if left overnight, so I recommend that you pair them with either cardamom or Assam tea) - They are a little spicy, but not overly so - If you do make them, make sure you credit ME because they are my invention and I WILL KNOW if you don't. - I have eyes everywhere
